The enzyme, characterized from the bacteria Flavobacterium johnsoniae and Mucilaginibacter mallensis, uses anomer-inverting mechanism to release beta-glucose from the non-reducing ends of kojibiose and alpha-1,2-oligoglucans with a higher degree of polymerization.
